GREEN CHILE CHICKEN


2.5 lb. bag Tyson's chicken breast tenderlions
1/3 - 1/2 c. Egg Beaters
Salt, pepper, garlic powder to taste
(I add some Seasoning salt in place of salt)
1 - 2 7oz. cans whole mild green chiles
(half or third them after rinsing out seeds)
1 c. low-fat (2%) grated Mexican blend cheese
2 - 3 T. light or fat-free Mayo
Mix Egg Beaters and spices into a bowl. Spray fry
pan with "Pam". Dip each tenderlion into egg mixture
and "fry" in hot skillet or fry pan 4 minutes on each
side (approx). Once all the chicken is browned lay-out onto
cookie sheet or large casserole pan. Lay 1/3 of green
chile on each piece of chicken (it will just cover each
piece quite nicely). Mix together grated cheese and
mayo. Add approximately a heaping teaspoon of cheese
mixture on each piece of chicken to cover all the pieces.
(See pictures above). Bake at 350 oven for 30 minutes.
This is really good and very low-calorie.

I'm thinking that I may just have to try these! And unlike Anna -- I may double the chilies!! LOL!!
